No idea where you plan on going after Vienna but if you go to the high mountains (ie Lechtaler Alpen) there will be snow and cross country skiing will be possible. I lived on the German Austrian border a few years ago and I would advise to be careful at that time of year, especially after fresh snow. Have fun and enjoy it. Great part of the world.

I notice that the various UK commercial ski touring operations that I look at who run Alpine hut touring trips run their schedule up to the last week in April but none of them go into May (apart from one Haute Route trip anyway). I'd imagine that at least in part this is because the thaw by then is making things too treacherous at high level.

And I'd be pretty sure the snow will have gone from the valleys for any loipe skiing by then too.
