Biscuits, cake, cheese (strong mature), chocolate, beef jerky (expensive though!), peperami, occasionally a bag of pork scratchings or peanuts. Not too keen on sweets though. I find that the 'whilst-you're-on-the-move' food takes up most room in the pack. If you've got over a weeks worth of it in there it's a lot! Chocolate bars probably take up the least room for their calories but I find too much sweet stuff a bit yucky. I like to have a mixture of everything. If I'm no hurry to get somewhere I'll stop and make a sandwich or crackers with cheese. I wonder what would be the one out of those that'd be most good for you, or suitable whilst hiking rather I don't think any of those I've listed are particularly good for you on their own, but possibly the cheese for it's carbs and fat rather than the sugary stuff?
