I've used the Mountain Tech combo in the past. Good, workmanlike axes and fine up to about grade 3 or so, on steeper stuff they feel a bit wobbly, but have the advantage over more technical tools of being useable for general mountaineering too. Bear in mind that you'll need to budget for leashes as well.
Haven't used the Stubai tools. It depends a bit on what your ambitions are really. If you want more technical tools with reverse curve /modular picks at that price, it makes more sense to go secondhand. Ice tools are mainly made of metal, so pretty hard to damage, though you may need new picks if they've been used hard.
If you're contemplating IV or harder Scottish or maybe alpine water ice, it's probably worth going for something more technical if used. If you're like most people, you won't really know yet. If you plan to stay around grade 2/3 then the MT Techs will be fine.
Hope that's some help, it's distracted me from my packing frenzy anyway :-)
