How easy is it to just turn up and pay for the following organised activities in Chamonix

Mountain biking
white water rafting
canyoning
canyoning with a hydro speed

Although I've not done any of the above in Chamonix, I've been there a few times and every street corner seems to be an agency selling trips to do these and loads of other activities.
I've only checked out parapente and thats a thing you can organise for the following day if you want
what time of year are you thinking of going as that obviously has a bearing on whats available

You should have no problem,
Chamonix is very good at getting visitors to part with their money, in winter all the agencies are selling snow related activities and in summer all the stuff you're interested in. the TI and every campsite has loads of leaflets for everywhere, some with discounts.
Are you intending to camp or hotel?
have you been there before?
ps
the waters bloody cold at any time of year!

Go to Zero G in Cham, or the other bike shop next to it and hire out a hardtail (good for roads and any mountain hillside). The other bike shop is opposite the athletics track, but zero G is the best. Then go to the tourist info and get a free (basic) map of the mountain bike routes in the area and do any of the black routes for fun, the Montenvers (i think but its in that direction) is a good bike/walk route which follows near to the rail track.

if you take an early train with not too many passengers then it ought to be possible to take your bike up to montenvers and then just have the exiting down bit with none of the strain

Thats a bit easier (except you may have to be there before 7:30 though), and try using the cable car lifts as well, quite cheap and great for pure downhilling

For pure downhilling remeber your gloves and pads, Full sussers will com in handy to. For put freeride, read the animal location x artical in erm.....one of the recent mbrs

I did Chamonix last year when foot and mouth was still around. Mostly mountain biking but a bit of walking. If I were you I would just hire a bike get a map and go for it. I have some (not so good) snaps of the trip if you want a taster http://www.mountainbikeroutes.co.uk just look at the alps section.
