To end the route you are drawing in Memory Map you just click on the first point, if it's a circular route.  If it's a linear route you click again on the last point.

If you are creating a long linear route that you will want to split into sections:

Draw the entire route as a 'route'.   Tweak the waypoints as required.  Right click the route and 'convert to track'.  On the track, right click where you want to split it, and choose 'split track'.  Convert each track back to a route again by right clicking.

Seems a bit of a faff but it works well enough.
